2-1/2 pounds boneless pork, cut into 1-inch cubes (i use leftover chops)
2 tablespoons vegetable oil (don't use this if you aren't cooking raw pork)
1 can (28 ounce) diced tomatoes, undrained
1 can (16 ounces) chili beans, undrained
1 can (8 ounces) tomato sauce
1/4 cup salsa
1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon chili powder
1 teaspoon minced jalapeno pepper
1/4 teaspoon garlic powder
1/4 teaspoon cayenne powder
1/4 teaspoon pepper
1/4 teaspoon salt
Directions
In a large skillet over medium-high heat, brown pork in oil; drain. Place in a 5-qt. slow cooker; add remaining ingredients. Cover and cook on high for 2 hours. Reduce heat to low and cook 4 hours longer. Yield: 10-12 servings.

Pancake Mix Biscuits
1 biscuit per serving
an unconventional easy way to make biscuits but tasty

Ingredients
3 cups of complete pancake mix
1/3 cup of water
1/4 cup melted butter
1 egg
Directions
Preheat oven to 425°. Mix all the ingredients in a bowl with a spoon. Roll out dough on a floured (or in our case pancake mixed) counter. Cut out circles of dough with a floured glass or biscuit cutter.Place on an ungreased cookie sheet with parchment paper.
Bake for 8-10 minutes, until the tops are golden.
Serving Size: makes 13 2-inch round biscuits
